Monterey Rotel Egg Casserole

  • 14 lb butter
  • 10  eggs
  • 12 cup flour
  •  teaspoon baking powder
  • 14 teaspoon salt
  • I can of ROTEL, drained
  •  pint cottage cheese
  •  lb Monterey Jack cheese, grated


  1. Melt butter or spray a 9 x 13 pan or pyrex dish. 
  2. Beat the eggs in a large bowl, add flour, baking powder and salt and blend. Add melted butter, chilis, cottage cheese and Jack cheese, and mix until blended. (Sometimes, I use Bisquick in place of flour and baking powder). 
  3. Pour batter into pan and bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake 35-40 minutes longer. 
  4. *Feel free to make it your own. We have added chives, bacon, cilantro, onion, jalapeños, and sausage. 
  5. Serves 12
